Water hyacinth definitely is a weed that covers the water-bodies pretty fast and turns the entire into green mat before turning it into land form over a period.  There is however and advantage of Water hyacinth - it is a very good water purifier.  Depending upon the interest on this water body, there are two suggestions I could make - 1. Adopt a period weeding of this plant so that water is clean and congenial for aquatic life (from an environmental percepctive. 2.  Allow it to cover 3/4ths of the water body and harvest it and dry it for biomass generation as a combination with other biomass.  If both are not feasible, then I am sure an agronomist would help you controlling this weed, please.  All the best.
