This is similar to oil water separator in oil&gas industries. I would rather collect the waste water in a tank fitted with tpi pack and heat up to 60 deg. C for allowing grease to be in fluid state. The oily layer can be removed by phase separation and remaining water can be disposed off. Depending on local regulations, secondary treatment may or may not be required.

That solution is only good for large operations that haven't integrated sustainability yet ... to use such amount of energy and set-up just for grease doesn't seem the best way available? Jut my humble opinion ...
